Cress-like young seedlings are used in salads, while stems, leaves and even roots are used as flavoring in soups, sashimi, rice dishes and more. Withstands low temperatures and with protection can be harvested into winter months. Generally grown as an annual, Mitsuba is perennial in mild climates.

When to sow outside: Even though a cool season crop (withstanding temperatures as low as 15° F), seeds germinate best when soil temperature warms up – usually 1 to 2 weeks after the last spring frost. May bolt if started too early in spring. Also sow in early fall for late fall harvest.
When to start inside: Not recommended.
