60 days. Mache is delightful eaten alone as a salad, mixed with other greens or cooked like spinach. The big seeded variety is more tolerant of hot conditions without becoming bitter. Also tolerant of cold weather, it will grow in cold temperatures and even survive freezing temperatures in many cases.

When to sow outside: Northern, cold climates: 4 to 6 weeks before average last frost or as soon as the soil can be worked for early summer harvest, late summer for fall harvest, and late fall for spring harvest. Mild winter climates: Fall to winter, for winter to spring harvest.

When to start inside: Not recommended.

Special Sowing Instructions: Seeds can take a while to come up - be patient! Sow heavily – germination is variable.

Harvesting: Harvesting can begin with young seedlings. Simply cut off at ground level. Leaves can be picked when they are 1" - 2" long. You can also wait and harvest entire head at once if you need large quantities of leaves. Some people harvest heads when they are quite small and serve as a gourmet, baby mache salad.
