65 days. Radicchio forms lettuce-like heads wrapped with beautiful, purplish-red leaves and contrasting white veins. The distinctive, sharp flavor is a favorite in salads, but is also delicious steamed with mixed vegetables, used in cole slaw, or added to stir-fries. Cooking gives radicchio a milder flavor. Slow to bolt.

Harvesting: Harvest when heads begin to become firm by cutting at the base of the head. Another head may be produced in fall, or if winter comes early, radicchio can overwinter to produce another head the next spring. Remove the large, floppy outer leaves to reach the inner, compact head.
