Mung bean sprouts have been grown and used by the Chinese for over 3000 years. They are high in protein, iron, magnesium, many vitamins, and are a good source of dietary fiber. They are an essential ingredient in eggrolls and many Asian stir-fry dishes, but can also be enjoyed in a number of ways, raw in salads, or on sandwiches — the culinary possibilities are limited only by your imagination!
There are several ways to grow sprouts. The most popular, easiest, and least expensive is the jar method. All you need is a glass canning jar (quart or larger) and a lid to grow short, crunchy sprouts. For long straight sprouts like those sold in stores, a flowerpot or a plastic deli container will do! If not properly disinfected, all seeds have the possibility of carrying E. coli bacteria or other foodborne pathogens. Please disinfect the seed prior to sprouting by soaking in a 2% bleach solution (1 tsp. bleach to 1 cup hot tap water) for 15 minutes. Rinse thoroughly.
