10-20 days. Pea shoots are a delicious and nutritious addition to almost any of your favorite recipes. Fast and easy to grow, they can be enjoyed any time of year. Pea shoots can be grown indoors in shallow flats under lights or in a sunny window. Outdoors, Peas for Shoots are best grown in the cool temperatures of spring and fall, but will grow any time soil temperatures are between 45°F and 75°F. Harvest when plants have a couple sets of leaves, usually when shoots are only 3” to 4” tall. Pea shoots are extremely versatile. Add to salads, sandwiches, soups and stir-fries, use them for a pizza topping, or serve as an edible garnish.

This packet yields approximately 12 cups of pea shoots.

When to sow outside: Sow outdoors any time of year when soil temperatures are between 45ºF-75ºF.

When to start inside: Sow indoors any time of year. For a continual crop, sow every ten to fourteen days.

Harvesting: When seedlings emerge, the first pair of leaves to show are the cotyledons, which look very different from the leaves that follow, called “true” leaves. Pea shoots are ready to harvest 10 to 20 days after sowing, when they have a couple sets of leaves, and are 3" to 4" inches tall. Slow growers may need an extra day or two. Harvest the tallest seedlings first by cutting just above the soil line. Rinse and use immediately, or store in the refrigerator.
