It happens every year. Each spring I am so excited to garden that I grow more than my family could ever eat. I realize this is a bonus, so I try to make the absolute most out of every single vegetable I harvest. If you are also fortunate enough to have too many veggies, try these preparing and sharing ideas.<\/p>\n\n\n\n

    \n
  1. Freezing.<\/strong>\u00a0Greens<\/a>\u00a0(kale, spinach, collards),\u00a0onions<\/a>,\u00a0peppers<\/a>,\u00a0tomatoes<\/a>, and\u00a0winter squash<\/a>\u00a0can be frozen without blanching (boiled quickly and then cooled in ice water to preserve nutrients and color). Vegetables such as\u00a0broccoli<\/a>,\u00a0Brussels Sprouts<\/a>,\u00a0carrots<\/a>,\u00a0cauliflower<\/a>, and\u00a0beans<\/a>\u00a0maintain a better quality when blanched before freezing.<\/li>\n\n\n\n
  2. Batch meals.\u00a0<\/strong>Cook up a big batch of\u00a0tomato sauce<\/a>, eggplant cutlets, or even a whole casserole and freeze the extra portions in well-marked, freezer-safe containers.<\/li>\n\n\n\n
  3. Canning.\u00a0<\/strong>Preserve the bounty by canning. Be sure to follow a tested recipe to avoid any chance of food-borne illness.<\/li>\n\n\n\n
  4. Meet your neighbors.\u00a0<\/strong>You’ll not only make new friends (or delight the old ones), but you may even turn some into gardeners! The more gardens in a neighborhood, the higher everyone’s sense of pride, too. So bring over that extra zucchini, flower bouquet, or basil.<\/li>\n\n\n\n
  5. Donate.\u00a0<\/strong>Do you know that food banks around our nation find it difficult to consistently provide fresh vegetables to their communities?\u00a0Find your local food bank<\/a>\u00a0and share the harvest.<\/li>\n<\/ol>\n\n\n\n
