Traditionally, the term referenced a collection of herbs that grow wild in the Provence region, including basil, marjoram, oregano, rosemary, summer savory, and thyme, but by the 1970s, spice wholesalers concocted their own mixes which tended to vary a bit, and began to sell commercially.
