<\/figcaption><\/figure>\n\n\n\n<p>Extremely high temperatures slow the ripening process in <a href=\"https:\/\/www.botanicalinterests.com\/community\/blog\/heirloom-tomatoes\/\">tomatoes<\/a>. In fact, most growth processes slow down during temperature extremes to protect the plant. So those tomatoes sitting on the vine during a heat wave aren&#8217;t getting any better. They may, however, be at risk for sunscald.<\/p>\n\n\n\n<p>Cold weather below 50\u00b0F has the same effect. Once <strong>nighttime temperatures start dropping in fall, vine ripening slows.<\/strong> You could wait weeks for tomatoes to turn red on the plant, or you could pick tomatoes early and have ripe fruit in days indoors.<\/p>\n\n\n\n<p>Indoor ripening lets you control the environment completely. This provides the ideal conditions for <a href=\"https:\/\/www.botanicalinterests.com\/community\/blog\/sweet-tomatoes\/\">flavor development<\/a> that outdoor plants can&#8217;t always provide. Insects seem to have a sixth sense for finding perfectly ripe fruit and eating it before you get a chance to.<\/p>\n\n\n\n<p>Birds are even worse. A flock of birds can strip a tomato plant clean in one day, taking bites out of multiple fruits and ruining far more than they actually eat. They&#8217;re particularly attracted to the bright red color of fully ripe tomatoes.<\/p>\n\n\n\n<p><strong>Cracking and splitting also make ripe tomatoes vulnerable <\/strong>to secondary problems. Once the skin splits, fruit flies, ants, and other insects move in quickly.<\/p>\n\n\n\n<p>If you pick tomatoes early, you remove them from the danger zone before pests discover them.
