55-60 Days. Jaunte et Verte squash tastes like they are covered in butter! This is a beautiful French heirloom, patty pan that is tender when picked young, with thin, delicate skin. Rind varies from light green (verte), to yellow (jaune), to radial green stripes on ivory squash (small fruit may not show streaking). Delicious used fresh all summer, but can be matured to the hard shell stage as an ornamental. Long harvest period, prolific.

When to sow outside: RECOMMENDED. 2 to 4 weeks after average last frost, and when soil temperature is 70°‒85°F.

When to start inside: Not recommended except in very short growing seasons, 2 to 4 weeks before average last frost. Sow in biodegradable pots that can be planted directly into the ground. Transplant when soil temperature is at least 60°F.

Harvesting: Harvest frequently to increase yield; squash seem to get monstrous overnight. While edible at almost any size, squash seeds are less developed in young fruit, therefore more tender. Using a knife or clippers, cut squash off including some of the stem. By including stem, the fruit is sealed and less likely to mold or dry out.
