Their mild flavor is the perfect complement atop grilled meats, mixed with salad greens, or eaten like a sprout. Hard to find in stores and always freshest homegrown. For freshest taste, use microgreens immediately after harvest. Beet microgreens can be grown indoors at any time of year and are a nutrient-packed way to get your “green fix” in the dead of winter. Move containers as needed for best light exposure and temperature. Harvest when first leaves appear and enjoy! Detailed sowing instructions inside packet.

When to Sow Outside:Not recommended. Microgreens are fragile and outside soil makes them difficult to clean.

When to Start Inside: RECOMMENDED. Sow indoors any time of year. For a continual crop, sow every 10 to 14 days.

Special Sowing Instructions: Use a shallow container with 1”–2” of potting soil. Sow seeds in a single layer, and cover with 1/2" of soil.

Harvesting: When seedlings emerge, the first pair of leaves to show are the cotyledons, which can look very different from the leaves that follow, called “true” leaves. Beet microgreens are ready to harvest 15 to 21 days after sowing, when they have cotyledons. Cool growing temperatures may slow germination and growth. Harvest by cutting just above the soil line.
