This ancient, Asian green, also called pak choi, is just as excellent in a stir fry as in a marinated salad. Harvest at 5"–6" tall in only about 35 days for tender, baby choi. Plants are ideal for growing in containers, make a pretty addition to mixed containers, and resist bolting.

    Germinated well, but started bolting in just a month. Tasted fine, but leggy and never developed the wider stems as shown in the illustration that to me characterize bok choy. Maybe I should try a regular bok choy and just harvest early?

    Growing this in Hydroponics system and it’s doing great! It was a bit leggy at first probably due to the lighting on the system, but it works because it hangs over the edge better. Excited to try it after a couple more leaves have developed!

    Bok choy had near 100% germination direct sow. Still growing despite several frosts.
