Bok choy, also called "pak choi", is an ancient Chinese cabbage, milder and more versatile than European head cabbage. This frost-tolerant green is traditionally stir-fried, used in soup, and fermented, but the possibilities are endless. The center stalks of baby bok choy are called "hearts" and are considered by some to be a delicacy.
