Mâche is delightful eaten alone as a salad, mixed with other greens, or cooked like spinach. The big-seeded variety is more tolerant of hot conditions without becoming bitter. Also tolerant of cold weather, it will often survive freezing temperatures to 10°F.

When to Sow Outside: RECOMMENDED. Cold Climates: 4 to 6 weeks before your average last frost date, or as soon as the soil can be worked for early summer harvest, and late summer for fall harvest. Mild Climates: Sow in fall to winter for cool-season harvest. Ideal soil temperature for germination is 40°–68°F.

    Very poor germination

    I planted these this fall with a variety of other greens. All the other greens germinated well and I'm harvesting from them, but only a few of the mache germinated, and they sprouted, got a couple leaves, and kind of quit growing. Not sure if there's a trick to mache or what, but I probably won't bother with it again.
