Coverage & Planting Details

Coverage This packet sows up to 36 feet.
Row Spacing 12"
Seed Depth ½"
Seed Spacing A group of 3 seeds 6"
Thinning When 2" tall thin to 1 every 6"
Germination 5–10 days
Start Indoors Not recommended; roots sensitive to disturbance.
Direct Sow RECOMMENDED. 4 to 6 weeks before your average last frost date, and when soil temperature is above 40°F; ideally 50°–75°F. Successive Sowings: Every 3 weeks until 4 weeks before your average first fall frost date. If mulched, spinach can overwinter in sub–zero temperatures. Soil temperatures above 85°F halt germination.
Growing & Harvesting Pick individual leaves from outer edges of plant as they become big enough to use or cut the whole plant 1" above the ground; new leaves will be produced. When picking individual leaves, also removing the leaf stem at the same time is best; this reduces vulnerability to disease during die-back and conserves plant energy. Harvest before the plant sends up a flower stalk (bolting). Just prior to bolting, leaves take on an "arrowhead" shape, adding small keel shapes to the base of the leaf.

    Highly recommend

This is my first time growing this variety. I am in Zone 9b and I am growing in a container. I generally grow all my greens as cut-and-come-again. I got my first harvest last week and I will be harvesting again in a week. All the seeds germinated, including the one stepped on by my cat. The leaves are tender and taste amazing.

    Hey Helen,

We love to hear this is your first time growing Matador Spinach and that you're already getting such fantastic results! Perfect germination rates (even after a little cat intervention!) and your first harvest already is great to hear! The cut-and-come-again method is such a smart way to keep those tender leaves coming throughout the season. Thank you for sharing your wonderful experience with Matador Spinach! Keep on growing 🌻️

The Matador Spinach seeds did not germinate for me this season, at all. I live in La. Zone 9A.

    Struggle in Zone 7A

I have been Ironically struggled to get these seeds to germinate for 2 years. My germination rate is maybe 2 sprouts for every 10 seeds. I have no idea what I'm doing incorrectly as I have tried different seed starting mixes and conditions and direct sowing as well. It is the second most difficult thing for me to sprout which is ironic as everyone else seems to be having no issue with this one. I'm sure it's something I'm doing wrong.

    Hey Jared,

Thank you so much for taking the time to share your thoughts in a review. We really appreciate your patience and persistence with the Matador Spinach Seeds over the past two years. Germination challenges can be so frustrating, especially when you're trying different approaches! Spinach can be a bit tricky - it really prefers cooler soil temperatures (around 50-70°F) and consistent moisture without being waterlogged. Sometimes in Zone 7A, timing can make a big difference too. Your feedback is invaluable to us, and we're committed to helping you succeed with your growing journey. Thank you once again for your input.

    Keep on growing 🌻️

    So much fun to grow

I picked seeds that would be easy to grow with my toddler and these exceeded my expectations. The leaves were huge and easy to clean. They survived a harsh frost we had too.
