The flavor and scent of the edible leaves and flowers is floral, citrus, and spicy. Signet marigolds have long been used to add flavor and color recipes. Infuse in oil and vinegar for a salad dressing, or chop and use as you would tarragon. Fairly drought tolerant. Deer and rabbit resistant.
