| Growing & Harvesting | For eating, harvest buds when they are still tightly closed, just before they begin to open (opened heads are tough). Cut the central bud first by cutting the stem with a sharp knife 2" below the bud. After harvesting, side shoots will produce smaller harvestable buds (a unique delicacy!). |

Love these! First time growing artichokes. Started 12 seeds indoors on 1/19/2025. 11 sprouted, and as of today (2/22/25) each seedling is 3" inches tall. So far so good. I received advice from a friend to transplant them into slightly bigger pots when they reach 4" inches in height. He also recommended setting them in a cold room/windowsill for 10 days for vernalization before transplanting them out into the garden at the end of March. Fingers crossed! These have a lonnng start time, so be prepared. Almost all of my seeds germinated, but only one made it to producing. This was definitely user error, as I had to keep the seedlings alive for 3 months. However, the one plant produced TONS of artichokes. We ate some and left some for the bees. So worth the labor of love.
